Since opening in 2016, Flight West has become a beacon for the Westside of Monroe County. Recognized as one of Rochester’s best bars, it continues to be a neighborhood favorite, offering a warm & welcoming atmosphere that regulars love. Now, under the care of lifelong Rochester residents & family, Flight West has been revitalized while maintaining the same quality & friendly service. Our Executive Chef Javia Hart and Bar Manager Mercedes Simpson lead a talented team committed to ensuring an exceptional dining experience. Food has always been more than just cooking to me it’s how I express myself.
Growing up, I was surrounded by bold flavors, family traditions, and different styles of cooking. My father and siblings introduced me to the rich flavors of Caribbean and Latin cuisine, Soul Food, and Southern BBQ. Those experiences became the foundation of my love for food.
I started cooking for my family at an early age, and somewhere between creating a meal and watching the people I loved enjoy it, I discovered something powerful: food could create happiness, bring people together, and tell a story.
Today, I’m proud to call myself an Executive Chef.
My kitchen is my canvas. Every ingredient is an opportunity to create. Every plate is a chance to take something familiar and give it my own expression bold, soulful, flavorful, and unexpected.
